Squash & Turkey Lasagna Roll-Up

Full Recipe for Squash & Turkey Lasagna Roll-Up

Ingredients:

  • 1 B.C. squash, halved and deseeded
  • 1 package of ground turkey
  • 3-4 cloves of garlic, minced
  • 2 tbsp extra virgin olive oil + more for finishing
  • 1 425g container of ricotta cheese
  • 16 sheets of lasagna
  • 2 jars of pasta sauce (homemade or store-bought)
  • 1 1/2 cups mozzarella cheese, grated
  • Seasoning blend (divided between squash and turkey mixture): 2 tsp each of oregano, paprika, garlic powder
  • Salt and Pepper to taste
  • For serving: Freshly grated parmesan cheese and fresh basil

Preparation:

  1. Preheat the oven to 425F. Halve and deseed the squash and add it to a baking sheet lined with parchment paper. Drizzle the squash with olive oil and season with oregano, paprika, garlic powder, salt and pepper. Place cut side down and bake until softened, about 40 minutes.
  2. Meanwhile, heat a skillet over medium heat and cook the garlic until fragrant, about 5 minutes. Mix in the turkey and season with oregano, paprika, garlic powder, salt and pepper. Cook until no longer pink and cooked through, about 8 minutes.
  3. Remove from the heat and add to a large bowl. Mix in the ricotta cheese and then scoop out the squash once cool enough to handle. Mix well, taste and adjust seasoning if desired.
  4. Meanwhile, cook the lasagna sheets according to package directions (usually 7-8 minutes). Line a baking sheet with parchment paper and drizzle a small amount of olive oil. Arrange the cooked and drained lasagna sheets in a row. Drizzle with olive oil.
  5. Preheat the oven to 350F.
  6. To each lasagna sheet, add approximately 1 cup of the mixture and spread it out evenly the length of the sheet. Top with some mozzarella cheese. Roll each one tightly, careful not to overfill.
  7. To an oven-safe dish, pour in the pasta sauce. Tightly place the lasagna roll-ups into the baking dish. Top with a little pasta sauce and mozzarella cheese.
  8. Bake uncovered for about 40 minutes, or until the cheese is bubbly.
  9. Serve with a drizzle of good olive oil, grated parm and basil. Enjoy!
